Nestled deep in the&nbsp;Parc naturel&nbsp;r\u00e9gional des volcans d\u2019Auvergne, Salers is famous for its dark lava stone building, often topped with distinctive turrets dating back to the Renaissance period.<\/p>\n\n\n\n<h5 class=\"wp-block-heading\">Garabit<\/h5>\n\n\n\n<p>The <a href=\"http:\/\/www.auvergne-tourism.com\/cultural-heritage\/ruynes-en-margeride\/viaduc-de-garabit-oeuvre-d-eiffel\/tourisme-PCUAUV0150000426-2.html\" target=\"_blank\" rel=\"noopener noreferrer\">Garabit Viaduct<\/a> is a railway arch bridge spanning the River Truy\u00e8re near Ruynes-en-Margeride built by none other than Gustave Eiffel himself; in fact, it is said that Garabit was a practice, of sorts, for the iconic Iron Lady in Paris that would come to life a few years later.&nbsp;The striking red wrought iron bridge was, at the time, the highest in the world at 124&nbsp;metres above River Truy\u00e8re.<\/p>\n\n\n\n<h5 class=\"wp-block-heading\">Ch\u00e2teau de&nbsp;Val<\/h5>\n\n\n\n<figure class=\"wp-block-image is-style-default\"><img decoding=\"async\" src=\"https:\/\/www.toeuropeandbeyond.com\/wp-content\/uploads\/2012\/09\/Things-To-Do-In-Cantal-168.jpg\" alt=\"Things To Do In Cantal 16\" class=\"wp-image-20149\"\/><\/figure>\n\n\n\n<p>There are many estates and ch\u00e2teaux in Cantal, but my favourite is <a href=\"http:\/\/www.chateau-de-val.com\/Le-chateau-de-val-en,1,7653.html\">Ch\u00e2teau de Val<\/a>. Built in the 15th century by the noble d&#8217;Estaing family (which was basically royalty at the time, and still is, in some prospects), the fortress is built on a rocky peninsula in the mighty River Dordogne. It&#8217;s now a historic monument of France.<\/p>\n\n\n\n<h5 class=\"wp-block-heading\">Cheese Route \/ La cave de Salers<\/h5>\n\n\n\n<figure class=\"wp-block-image is-style-default\"><img decoding=\"async\" src=\"https:\/\/www.toeuropeandbeyond.com\/wp-content\/uploads\/2012\/09\/Things-To-Do-In-Cantal-9.jpg\" alt=\"Things To Do In Cantal 16\" class=\"wp-image-20139\"\/><\/figure>\n\n\n\n<p>If you&#8217;re even remotely curious about cheese, you have to explore the <a href=\"http:\/\/www.fromages-aop-auvergne.com\/-Cheese-Road-\">Auvergne cheese route<\/a>. The region is home to five emblematic cheeses&nbsp;which are pretty much the pride and joy of locals: Fourme d&#8217;Ambert, Cantal, Salers, Saint-Nectaire, and the world famous Bleu d&#8217;Auvergne. The route&#8217;s 40 stops will take you straight to cheese farms and production centres, allowing you to really immerse yourself in the savoir-faire and know-how of this impossibly tasty tradition.<\/p>\n\n\n\n<p><a href=\"http:\/\/www.cavedesalers.com\/\">La cave de Salers<\/a> is also one of the most interesting things to do in Cantal, as it features an interesting exhibit on the history and industry of cheese in Auvergne.
